Home Made Banana Muffin

Daddy had a hand with main courses ranging from local to international and he's churned out some strange but sweet desserts. Today I was invited along for an attempt at pastry!

Muffin's are good to start with as the ingredients are easy to come by and can be prepared in about 30 minutes. I was assigned to the bananas and popped them in while daddy mixed.

Daddy said the batter had to be both fluffy and thick enough to hold itself. Probing further the trick is when you scoop it up, the feel has to be light and doesn't drip too much.

The mixture is poured into a well greased muffin pan and placed in preheated oven at 160°C which is equal to 320°F for 20 minutes.

The mouth watering goodies smells fantastic! Here's the recipe for 12 fabulous muffins.

Ingredients:
• 1/2 cup butter, room temperature.
• 1 cup granulated sugar.
• 2 large eggs.
• 2 large bananas, ripe, mashed.
• 1 teaspoon vanilla extract.
• 2 cups all-purpose flour.
• 1 teaspoon salt.
• 1 teaspoon baking powder.
• 1/2 teaspoon baking soda.
• 1/2 cup chopped pecans or walnuts.

Instructions:
1. Grease 12 muffin cups or line with paper muffin liners.
2. Cream butter and sugar until light and fluffy.
3. Beat in eggs, one at a time, beating after each addition.
4. Add bananas and vanilla and beat until smooth.
5. Mix together the flour, salt, baking powder, and baking soda.
6. Stir flour mixture into butter mixture.
7. Stir until dry ingredients are moistened then gently stir in chopped nuts.
8. Spoon banana muffin batter into prepared muffin cups or liners.
9. Bake at 320°F for about 20 minutes, or until tops are lightly browned.
10.Cool muffins by turning them out onto rack to cool longer.

Tesco in Kepong!

Tesco opened a new store close to my place enticing us to switch our shopping here. It's actually good because the place is huge with super wide selection and the price would add up with the fuel and time we need to spend driving far off for a little less.

There's Celebrity Fitness opening up and MBO Cinema's got their promotional posters all over. The main attraction for me is the trolley. It's not meant for 3 year old's ... but I must say it's very comfortable and nice to have someone ferry you around.

Given a chance, wouldn't you want to shop like this?
